I am using the cable that has a monitor plug and 2 colored cables (red and white, which are audio) which cable would I need to connect these to head jack speakers ( computer speakers)

Go to Radio Shack, or any place that sells electronics and get a stereo RCA (your 360’s cables) to mini-jack (your computer speakers) adapter. Should only be $3, or $5 if you get a longer wire.
Be sure it’s the stereo adapter – some only do mono, which won’t damage anything but you might as well get the best sound possible.
